Why the Air Fryer is a Summer Cooking Lifesaver
When it's 100°F outside, the absolute last thing you want to do is turn on your big kitchen oven. Preheating a traditional oven can raise your kitchen's temperature by several degrees, forcing your AC to work overtime and triggering a hot flash before you even sit down to eat.
That is why Air Fryer Mondays are an all-summer-long event in my house.
Zero Preheating the House: The air fryer confines all that intense cooking heat to a tiny, insulated space. Your kitchen stays perfectly crisp and cool.
Speed: It cooks in a fraction of the time, meaning you spend less time standing over a hot counter.
That Perfect Crunch: You get that delicious, crispy summer patio-vibe food without any heavy frying.
Easy Summer Recipe: Air Fryer Salmon Bites
Salmon is packed with Omega-3 fatty acids, which are fantastic for overall wellness and hormone support. Paired with a bright, cooling slaw, this meal is light, refreshing, and takes under 15 minutes.
The Base: Golden Air Fryer Salmon Bites
Cutting the salmon into 1-inch cubes maximize the surface area, which means more crispy edges and a incredibly fast cooking time (under 8 minutes!).
The Ingredients
1.5 lbs Salmon fillets (skinned and cut into 1-inch cubes)
1 tbsp Sesame oil (or avocado/olive, if preferred)
The Seasoning Blend: 1 tsp garlic powder, 1 tsp smoked paprika, 1/2 tsp salt, and 1/4 tsp black pepper
The Finish: A squeeze of mayo sriracha sauce and oregano or parsley (add lime juice, if preferred).
The Steps
1.Prep & Coat: 5 min.
Pat the salmon cubes completely dry with a paper towel (this is the secret to a good crunch). Toss them in a bowl with the oil and the seasoning blend until every piece is evenly coated.
2.Air Fry Hot & Fast: 7-8 min.
Preheat your air fryer to 390°F. Arrange the cubes in a single layer, ensuring they aren’t piled on top of each other. Cook for 6 to 8 minutes (dependent on air fryer).
3.The Bright Finish: 1 min.
Transfer the hot salmon to a clean bowl. Immediately drizzle with sriracha mayo and/or lime juice, tossing gently. Place atop rice, coleslaw or salad depending on preference. See below for options to add.
3 Refreshing Summer Alterations
1. The Cool Citrus Coleslaw (Perfect Taco Topper or Side)
Instead of a heavy, mayo-based slaw that can feel weighed down in the summer, try a bright, vinegar-and-citrus-based crunch.
The Base: 4 cups shredded green and red cabbage + 1 shredded carrot.
The Dressing: Whisk together the juice of 1 lime, 1 tbsp olive oil, 1 tbsp honey, a pinch of salt, and a handful of finely chopped fresh cilantro.
Why it works: The clean, acid-forward crunch cuts right through the rich flavor of the salmon beautifully.
2. The Summer Berry & Avocado Salad Base
If you want to turn these salmon bites into an elegant patio lunch, serve them over a sweet-and-savory seasonal salad.
The Base: Crisp baby spinach or mixed spring greens.
The Mix-ins: Cubed avocado (for creaminess), sliced fresh strawberries or blueberries, and sliced almonds or pepitas for crunch.
The Dressing: A simple poppyseed dressing or a light balsamic vinaigrette.
3. The Refreshing Cucumber Mango Salsa
Fruit salsas scream summer and keep your body feeling hydrated and cool.
The Mix: Combine 1 diced ripe mango, 1 finely diced English cucumber (adds incredible hydration and crunch), 1/4 cup diced red onion, and a chopped jalapeno if you like a little kick.
The Application: Spoon this generously right over the top of the warm salmon bites. The contrast between the warm, spiced salmon and the ice-cold fruit salsa is incredible.
